Seafood Filled Mushrooms

1/3 Cup melted butter

1/2 cup plain unseasoned bread crumbs

8 oz. imitation crabmeat (finely chopped)

1/2 cup very finally chopped onion

1 clove minced garlic

1/3 cup melted butter

32 medium mushrooms – stems removed

10 oz. Swiss cheese – grated

Heat 1/3 cup butter in cast iron frying pan; saute` bread crumbs, crabmeat, onion and garlic until lightly browned. Allow to cool until stuffing mixture can be handled easily.

Spray a 9×13 glass baking dish with olive oil cooking spray; add 1/3 cup melted butter to cover the bottom of the dish. Place mushroom caps in dish firmly filling each one with stuffing mixture. once filled, fill in the gaps between mushrooms with remaining stuffing. Sprinkle grated swiss cheese.

Bake at 400 degrees for 20 to 25 minutes; serve immediatly. Leftovers are delicious also so dont worry! (If there are any leftovers…)
